Monday Blues, not...coz I had Tuna Fusilli :))

I haven't had Monday blues in a while. The perks of working from home. Well, perhaps the only blues I get on a Monday, these days is ironing Zaim's school uniforms. When the two kiddos and big bro leaves for school and Uni, the house will be quiet and peaceful. Time for that cuppa OR... perhaps get that extra shut-eye, most of time the latter wins. 

Today, we had brunch outside, and I settled some paperwork i.e invoicing. And then a client whatsapped to get advice on copy for their outdoor ads, which thrilled me. I love looking at creative ideas and  how they will materialize on all the medium, outdoor, TV and prints. Btw, invoicing is something I have to remind myself to do regularly. One month, I overlooked invoicing and realized that I wasn't about to get paid that month and panicked. The downside of working for yourself...have to keep up with all the paperwork on your own. So I downloaded an apps called invoice2go . Have yet to explore the apps but will do so as soon as possible.

The kids get  home from school at 1ish. And lunch is usually at almost 3pm. Perhaps, too tired from school they are not too keen to eat immediately. Zaim must have rice so I will usually cook a simple fish/chicken/meat dish and a vege dish. Usually takes me less than an hour and I normally cook after they arrived home from school. 

For dinner, Zaim usually insist on rice again! Pengsan! Lucky thing, he's not fussy and will eat reheated stuff from lunch. But the rest will usually want to eat something else. So I usually whip up either a sandwich, pita, wrap and other simple stuff.

Tonight, I cooked a simple Tuna Fusilli, using whatever I have in the kitchen. If you get sick of eating rice and still wanna get that meal with carbs, try this. Easy peasy, like all my lazy meals. But still super sedap. Big bro had rice and less than a hour later, the pasta :P

This is how I did it:

A can of Tuna ( I use AYAM Brand Tuna in Water) 
Half a big yellow onion, 4 cloves of garlic, 3 red chillies (all diced finely)
2 tablespoons of tomato puree
One tomato (cut into eight)
A sprinkle of oregano
A sprinkle of basil (I would prefer fresh but those that I had in the fridge decided they are better off in my compost bin)
EVOO (Extra Virgin Olive Oil)
Half  a pack of fusilli ( In this house that feeds 5)
Salt, Black Pepper & Sugar
Cheese, whatever kind you fancy

So, just boil the pasta according to the package (remember to add a bit of EVOO and some salt)

While that is happening, get your pan going with the EVOO. And fry the onions, garlic and chillies. EVOO don't heat well  as opposed to our normal cooking oil so there's no need to wait for it to heat up, macam nak menumis gulai bagai ok..

Once the onions are translucent, I added the 2 tbsp of tomato puree and shortly after the tomato and then the tuna, give it a bit of a stir, add the dry spices. By this time, you would have a lovely aroma going on in your kitchen.

Then I added salt, black pepper and sugar. I usually add sugar in pasta sauce to balance the sourness of the tomato puree. Just a small spoon would do,

Almost done, and you just need to stir in the cooked, al dante fusilli and make sure all the pasta is nicely covered with the tuna mix.  Add a bit of the boiled pasta water if you find it too dry ok. 

I served the pasta with shavings of cheddar cheese. We use Bega. I would prefer parmesan but I only have cheddar in my fridge, at the mo. There, easy stuff,no need to crack your head to cook ok.. Try la.. Bon appetit!
