Simple dinner when you've stuffed yourself crazy during the day

We had a family lunch of Dim Sum and Chinese food today at Unique Seafood, Petaling Jaya. Hard to find Halal Dim Sum and when I found out about this one; and 50% discounts on Dim Sum during lunch, I have to go!

After we dropped off my son and father in law at home, we went around looking for a big rice cooker for me to use for cooking big batches for catering. After a few shops, we finally found one at a shop in SS2. Well, made a deposit but hubs would have to collect the pot tomorrow. Then when to get some baking supplies at Bake With Yen in Taman Mega, PJ. Cake orders coming in for year-end parties annd such. Alhamdulillah!

When one go to Bake With Yen in Taman Mega, one must not NOT drop by Joy Bakery  just beside it for old fashion, home made cakes, I'm a baker that enjoys discovering and eating other people's bakes. Senang cakap suka makan laaa.

All that eating and then dinner...Haih makan lagi. So I thought ok lah let's settle for a simple dinner. Brought out the frozen Pollocks I bought yesterday and thawed them, while thinking what to do with them. Amende Pollocks ni? Jap google..Ok no Malay name, but it's salt water fish used by Mc Donald for their Filet o Fish.. gitu..

So here's what I did.



FOR THE FISH

Season the fish with salt and pepper. Squeeze on the juice of half a lemon. Heat some butter and pan frill the pollocks. Warning : Soft fish will not stay in one piece.

Once the fish are cooked through which would take about less than 10 minutes, set them aside on your serving plate.

Heat some butter, and stir fry a few cloves of garlic till aromatic (don't burn them) and then squeeze the juice of the other half of your lemon. Let the sauce cook for a bit and than pour it on your fish.

FOR THE SALAD - I used whatever I have in the fridge so you should do the same :)


Using the same pan, I put a little butter and throw in the baby tomatoes and the broad beans (I think that's what they are called). Let them simmer for a bit. Then I sliced one red onions and throw that into the pans as well. Sprinkle some salt and black pepper if you like some heat.

In another pan, I have poured some olive oil and arraanged 3 sliced, russet potatoes. Pan roast the potatoes. My son is a rice lover and not having rice will create havoc unless I have another carb alternative. Sprinkle salt on the potatoes too, I use these pink sea salt for cooking.

While all these are nicely browning in the 2 pans, I washed the butterhead salad, cut the japanese cucumber arrange them in a big bowl. Then I added the cooked braod beans, baby tomatoes and the caramelised onions on top of the salad; the little butter from the pan is my sort of dressing la gitu..
Then I arranged the now burnt browned, cooked potatoes and feta cheese, Again, I used whatever I had in the fridge, feel free to improvise.

Wallah, dinner's ready and served and gone in less than 15 minutes. It was yummy, at least according to my brood, Lots of flavors in the salad to accompany the garlic butter lemon fish.
